Solid bite of heat in a decent cheddar
I love this cheese. Its not so hot that it cant be eaten sliced up, but it has enough heat that you can cook with it and it brings the whole dish up to a good heat. If you're not used to heat then this might not be the cheese for you, but if no restaurant will make their food spicy enough for you, then give this a try! My current favorite thing to make with it is Smoked Bacon wrapped Jalapeno poppers. 1 pack of cream cheese, 1 block of scorpion pepper cheese, add ranch seasoning or garlic powder as desired, mixed & fill de-seeded jalapeno halves. Wrap in 1/2 cooked bacon & smoke until pepper is cooked to your liking. still refining the cook times & temps but pre-cooking the bacon is essential to avoid overcooked mushy peppers. My mom has eaten them twice and regretted it twice, but ketchup is spicy for her. My dad has consistently sampled my batches but only a few at a time.
